The château with the heart on its label.

Château Calon Ségur is a Third Growth and one of the best-loved estates in Saint-Estèphe. The heart comes from the Marquis de Ségur, who also owned Lafite and Latour but said his heart was in Calon. This is the 2005, with two decades of bottle age: dark fruit and cedar on the nose, a firm Saint-Estèphe backbone and a long, savoury finish.

Tastes like: Blackcurrant and plum, with cedar, tobacco leaf, graphite and earth.
Feels like: Full-bodied and dry, with firm, drying grip, balanced freshness and oak in the background.
Great with: Roast beef, lamb shoulder, game, aged hard cheeses.
Singapore and Asian favourites: Roast goose, braised beef brisket, wagyu yakiniku.

The geeky bit: Cabernet Sauvignon and Merlot lead the blend. From the walled vineyard around the château at the northern end of the Médoc, on gravel over clay.

Accolades: 96 pts Jane Anson · 94 pts James Suckling · 93 pts Wine Advocate · 93 pts Wine Spectator

Why we like it: A top Saint-Estèphe address, with two decades in bottle already behind it.

Serve: 16 to 18°C. Room temperature in Singapore is too warm for red wine, so give it 20 minutes in the fridge first. Stand upright for a day, decant gently off any sediment and serve soon after.
Alcohol: 13%
