Provence is not only rosé.
Château Les Valentines sits a few kilometres from the sea at La Londe-les-Maures and farms organically. The Blanc is pale in colour, with a fresh nose of citrus, exotic fruit and fennel, and a rounded palate that finishes bright.
Tastes like: Citrus, lychee and exotic fruit, with fennel and ginger.
Feels like: Medium-bodied and dry, with balanced freshness and no oak.
Great with: Grilled sea bass, prawns, bouillabaisse, goat cheese.
Singapore and Asian favourites: Thai salads, steamed fish with lime and chilli, salt and pepper squid.
The geeky bit: Vermentino (called Rolle in Provence), Ugni Blanc and Clairette, grown on schist soils with sea breezes at La Londe, one of the cooler corners of the Côtes de Provence.
Why we like it: Everyone knows Provence for rosé. This white shows what else the region can do.
Serve: 10 to 12°C. Straight from the fridge is a touch too cold; give it a few minutes in the glass.
Alcohol: 13%
