The geeky bit: 85% Sangiovese, 10% Ciliegiolo and 5% Alicante from sandy coastal vineyards in the Maremma. The Sangiovese is organic.

Why we like it: A soulful red with layers of intensity.
Serve: 16 to 18°C. Room temperature in Singapore is too warm for red wine, so give it 20 minutes in the fridge first. Decant 30 to 60 minutes.
