Domaine de Vauroux is a wonderfully classic Chablis estate, with vineyard holdings across all four Chablis appellations: Petit Chablis, Chablis, Chablis Premier Cru and Chablis Grand Cru. Vauroux was originally planted by the Tricon family in 1972. Unusually for Chablis – indeed the whole Burgundy region – Domaine de Vauroux was established as a single, continuous estate, comprising 13 hectares of vines. Over the years the domaine has expanded its vineyard area to 46 hectares, through judicious purchases in Bougros, Montee de Tonnerre and Montmains. It is located around the village of Chablis on slopes whose south-east and south-west exposure to the sun is ideal. The marly limestone soil, with a high Kimmeridge (specific limestone) content, gives our wines all the characteristics of a genuine Chablis. All vines are grown sustainably and fruit is given a very delicate pressing and vinification to create a wonderfully subtle, elegant range of wines.
Tasting Notes: Crisp clean fruit, flinty while showing off beautiful chalky minerality. Domaine De Vauroux presents beautiful notes of crisp apple, lime, a hint of guava, with soft vanilla on the bouquet. The palate has crunchy apple, nicely subtle but is softened by some of the honeysuckle and an almost creamy note that fades in. The chalk is evident though not intrusive on the vibrant finish.
Suitable to accompany recipes based on fish, molluscs and crustaceans, it is the perfect complement of white meat second courses.
